As long as there's a clear legend (and maybe a few different noteheads to draw the eye to what instrument to go to) I think one 5-line staff is ample. I myself am keeping the player busy with just 5 temple blocks, a sus cymbal and snare drum. Between the two mallet players and timpani every note can definitely be covered. As for the non-pitched percussion, since it's only one player I just used one 5-line staff and made a legend at the beginning that says what each line and space is for.
